    Thai Curry Stir Fry:
    2 cups fresh or frozen broccoli 2 large red, yellow, or orange bell peppers (I tend to do half of all 3)1 wild Alaskan salmon, white fish, tofu, or tempeh1/2 lb chopped carrots1 cup low fat coconut milk (I use the canned)1/2 cup water1/8 cup curry powder 1 tsp red pepper flakes (or to taste)1-4 tsp Braggs liquid aminos soy sauce or Himalayan pink salt to taste1/4 cup nutritional yeast (optional as a topping)optional: 1/2 red onion chopped, bamboo shoots, water cress, or eggplant.
    Combine all liquids, veggies, proteins, and seasonings in a wok or large skillet. Allow to simmer 10-15 minutes until desired tenderness. Serve with brown rice, quinoa, or udon noodles (or by itself)
    I absolutely LOVE curry and I have never added fish to mine so I am so excited for this recipe!
