Easy Coconut Chia Breakfast Pudding
1 can coconut milk ( use the cream gathered at the top of the can )
4 tblsp chia seeds
4 tblsp unsweetened coconut, shredded
2 tsp vanilla extract
1 tblsp maple syrup or honey
Add all ingredients in a bowl, stir & cover. Refrigerate for as few as 2 hrs or overnight.
Top with berries, nuts, granola or other fresh ingredients of your choice.
